Raw Vegan Energy Balls

Over the past few years, at home, we have been making these delicious raw vegan energy balls and, experimenting with a different blend of a healthy coating.

Love making them for my yoga workshops, retreats, walking, hiking days or any longer weekends away. They are simple to make and, you can be as creative as you want it to be. Here are few different version of coating which you can try, add and swap for your favorite ingredients e.g. other nuts, almonds, hazelnuts, or, matcha powder… whatever flavour inspires you. You will need a food processor and few ingredients and, it takes no time at all. From the beginning to finish, it will take you maximum 15mins. Seriously a full of goodness!

You will need:

  • 150g dates
  • 150g cashew nuts
  • 75g raisins
  • 30g goji berries
  • 30g pistachio
  • 10g flaxseeds

Process:Β 

  1. Blend all 150g cashew nuts in the food processor for about 3-5mins to finely pieces.
  2. Then, add pitted dates & raisins too and, watch till blends all in one. You want see sticky substance of all those ingredients together to make easier balls. I have added here extra 3 dates to create extra sticky texture a handful goji berries for some extra flavour. Goji berries are sticky which that’s what we want here.
  3. Divide some for pistachio coating, some for goji berries, flaxseeds and, I have also done in the past with coconut flakes too. You can stored them in the fridge if you going to take them to work, your walks… or, yoga.

Health benefits to Goji Berries, Pistachios, Flaxseeds.

Goji berries also are a full of antioxidants – which are known for their immune-boosting qualities and ability to fight harmful free radicals. Contains a large amount of vitamin A and vitamin C. Vitamin C, Carotenoids are responsible to fight cancer cells. Goji berries also stabilise a blood sugar and also promotes healthy looking skin as contains Beta-carotene. So many healthy benefits in a such small little red seed. In Asia, goji berries been eating for generations to extend their healthspan.

Flaxseeds are great way to add to your foods, salads, morning smoothies, porridge, energy balls, anywhere you can add them. So a full of protein, fibre and omega-3 fatty acids. Yes, flaxseeds are your good fats to eat. Can eve lower the cholesterol levels ( LDL – bad cholesterol ). May also stabilise blood sugar levels and prevent insulin resistance. For those who are in perimenopause or menopause, try few of those ( about 40g ) to add as your daily intake. May help with hot flushes, could improve mood.

Pistachios burst with a full of fibre, minerals, unsaturated fats. The fibre which is in pistachios can have a positive effect on your gut by binding on to good bacteria. Also includes B6 and thiamine. Getting enough Thiamine – B1 can help improve concentration and memory.
